Usually, when I munch on some veggies as an afternoon snack, it is really just a vehicle to eat some delicious dip. I decided to give up my beloved ranch dip (you know the one you mix a packet of Hidden Valley ranch seasoning with a container of sour cream, don't judge you all LOVE it!) for a healthier version.
To make my healthy veggie dip, you will need Fage Greek Yogurt, Chopped Spinach, and Pesto.
I used about 7 oz of the yogurt, 1/2 of a 10-ounce package of frozen spinach (thawed and squeezed dry) and about 1/4 cup of pesto. I also added a little bit of dill.
Simply mix together all the ingredients in a small bowl, add some salt and pepper, and serve with cut-up veggies! Delish!

ReplyDeleteI am OBSESSED with the Hidden Valley Ranch packets and have been on a three week long ranch binge! At least I am eating veggies with it. I wonder what would happen if you mixed the ranch packet with the greek yogurt in place of the sour cream. I'm sure that is what people are doing now.
