Welcome Back!

Welcome Back Everyone! I feel as though I am still in a food coma from the long weekend. I hope you all had a wonderful Thanksgiving with family and friends! I spent Thanksgiving at my summer house in The Hamptons on Long Island, it was so nice to see my whole family and catch up, the food was delish as well! On Friday, the boyf and I hit the road to head to Nantucket to spend time with his family, it was a lot of traveling but worth the trip. The weekend on ACK was fab and I did lots of shopping at Murray’s Toggery Shop, his family’s store! Overall, I would say it was the perfect Thanksgiving weekend!
Now, it is back to reality for this girl, I am so swamped with finals - grr Grad School!

Almost Thanksgiving!

I am sure most of you are busy getting ready for Thanksgiving tomorrow, I am also. I just arrived out east to my summer house in The Hamptons! My family celebrates Thanksgiving out here every year with both sides of my family -- always leads to some very interesting stories!

making friends in my new city!

I have a confession, it's not easy moving to a new city, no matter what anyone tells you! I moved up here to Boston from NYC in May and it's been a huge change. I guess I would say what I miss most is family and friends. In NYC, I have a huge network of amazing friends! My family is there as well, so I was always surrounded by a ton of wonderful people. Needless to say, moving to Boston was tough. I came here for the boyf and grad school, but I didn't know many people here except for my best friend from Villanova, BAG! This fall I have been so thankful to have her in my life, she has included me and introduced me to her wonderful group of friends up here and I feel truly lucky. I am slowly feeling more at home here and feel like I am becoming "one of the gang" in her group of friends, we went out this past weekend and had a blast. Even better -- two of her friends read my blog and came up to me at the party and told me so, it was pretty cool! So that's it, remember to be thankful for those special people in your life.

I'm Back!

Well I have been MIA! I went home to NY for the weekend and did not even have one moment to blog. It was so wonderful to see family and friends! I also spent some quality time with my precious Lulu Vuitton and she is doing much better, she is healing rather quickly which makes me very happy. I am so swamped with grad school and life in general, I swear this Fall just seems to be flying by!
I am very ready for this semester to be OVER...
The boyf and I have a tres fab trip to the Caribbean planned in T-3 weeks,
I cannot wait -- I need to escape reality!

Dinner Tonight: Rigatoni With Sautéed Eggplant and Tomatoes

Rigatoni With Sautéed Eggplant and Tomatoes

Ingredients

  • 12 ounces (5 1/2 cups) rigatoni
  • 3 tablespoons olive oil
  • 1 medium eggplant, cut into 1/2-inch pieces
  • kosher salt and pepper
  • 3 cloves garlic, thinly sliced
  • 1 pint grape or cherry tomatoes, halved
  • 1/4 cup fresh mint, torn
  • 1/2 cup grated ricotta salata or Parmesan

Directions

  1. Cook the rigatoni according to the package directions.
  2. Meanwhile, heat the oil in a large nonstick skillet over medium-high heat. Add the eggplant, season with salt and pepper, and cook, stirring occasionally, until golden brown, about 8 minutes. Add the garlic and tomatoes and cook, stirring occasionally, until the tomatoes begin to soften, 3 to 4 minutes.
  3. Add the drained rigatoni and mint and toss. Divide among individual bowls and top with the ricotta salata or Parmesan.

Germaphobe...

It’s that time of year – Flu Season! Yuck! I am more aware this year than in the past because I am now working with children, which means germ central! My doc has told me that frequent hand washing is one of the best ways to avoid getting sick and spreading illness. So I am now a hand-washing freak and also have been stocking up on Purell!

I am obsessed with these Purell minis! I have one hooked onto all of my bags -
I never leave home without Purell now!

My poor little LuLu Vuitton was hit by a car over the weekend and broke her pelvis, the Vet said she will make a full recovery - thank goodness! She is doing well at home and loves her "hospital bed" aka her favorite paper bag. I can't wait to head home and see her this weekend in NY - for now my Mom is taking wonderful care of her!

Fair Isle Cardigans!

Well the weather is getting a bit chilly up here in Boston! It might even snow today (well flurries!) -- I am starting to bring out my super warm sweaters. One of my favorite styles is the Fair Isle look. Fair Isle Sweaters create a traditional look but have a cozy, cool feel.
I love wearing mine with leggings or skinny jeans!

Weekend Recap!

Well I am back from the wedding weekend in Newport, RI! It was simply wonderful, the weather was amazing and the venue was stunning. It's rare to see Black Tie weddings these days, so it was so fun to see all the guests dress to the nines!
Well now it is back to reality for this girl, I am going to have a manic Monday! So busy this week with classes and projects, I am not sure I will stop at all -- oh the joys of grad school! Happy Monday Everyone!
